1 pint cherry tomatoes | |
1 tablespoon olive oil | |
4 focaccia bread | |
8 oz fresh mozzarella | |
0.67 cup pesto | |
0.50 cup spinach, chopped |
Directions

Preheat the oven to 425F.

Pour the tomatoes into a medium-sized baking dish, drizzle wioth the oil, a little salt and pepper to taste, and roast for 20-25 minutes.

While the tomatoes are in the oven roasting prepare the sandwich base by slicing the bread in half and spreading some basil pesto on both sides of the bread. Add a few slices of Mozzarella cheese on the bottom slice.

Top with the roasted cherry tomatoes, a little spinach, and the top slice of bread.

Bake in the oven for 5-10 minutes or until cheese is melted.
