    3 pounds beef chuck roast
    seasons: salt, black pepper, montreal steak seasoning
    1 tablespoon olive oil
    0.50 stick of butter, unsalted
    1 large white onion, chopped
    3 cups of carrots, chopped
    1 tablespoon, minced garlic (optional)
    16 oz jar of pepperocinis, stems removed
    1 packet of McCormick beef stew
    1 packet of McCormick au jus gravy
    1 packet of Hidden Valley ranch seasoning
    15 oz can of tomato sauce
    1 cup of water
    8 oz low sodium beef broth (optional) in place of juice from pepperocini jar for a lower sodium dish

    Directions

    Season both sides of the beef chuck roast with salt, black pepper, and montreal steak seasoning. Optional, leave out salt and montreal steak seasoning for a lower sodium version since this dish is high in sodium.
    Put olive oil in extra large skillet and then add beef chuck roast to the hot skillet to sear both sides. About 3-4 minutes until a brown crust has formed

    Remove the roast and place roast in a crockpot. Add stick of butter, large onion, carrots, garlic, whole jar of pepperocinis (juice and all), packet of beef stew, packet of au jus gravy, packet of ranch seasoning, tomato sauce, and water from 1/2 can of tomato sauce to the skillet. Stir and let simmer for about 5 minutes.Optional, do not use juice from pepperocinis and instead add one cup of low-sodium beef broth.

    Pour all of the mixture on top of the beef chuck roast in the crockpot. Set crockpot on high for 8 hours.
    Server over mashed potatoes and enjoy.

    This dish is high in sodium. Substitute with low sodium ingredients to reduce sodium content.
