2 onions, thickly sliced | |
3 pounds corned beef brisket with seasoning packet | |
8 oz package of baby carrots | |
6 medium potatoes, cut into wedges | |
1 cup water | |
5 slices of bacon | |
1 head green cabbage, cut into wedges |

Layer onion slices to cover bottom of crockpot slow cooker. Added corned beef with seasoning packet, carrots, and potato wedges. Pour 1 cup water over top. Cover, cook on LOW 10 hours.

With 30 minutes left in cooking time, heat large saucepan over medium heat. Add bacon; cook and stir until crisp. Remove to paper towel-lined plate using slotted spoon. Reserve drippings in pan. Crumble bacon when cool enough to handle.

Place cabbage in saucepan with bacon drippings, cover with water. Bring to a boil; cook 20 to 30 minutes or until cabbage is tender. Drain.
